Happy Pancake Day!
I just got this recipe is up in time for anyone reading in the northern hemisphere, but alas maybe not for anyone in Oz ~ who are all now probably rolling around their sitting rooms and kitchens reeling from ingesting way too much egg, flour and milk overload!
This is a recipe from my book and features my favourite form of pancake ~ aka the thinner ‘crêpe’ variety. I used to love eating and making these as a kid with simple caster sugar and lemon juice, my mum was an amazing crêpe maker and flipper. This is my recipe for Buttermilk crêpes with citrus compote. Feel free to use plums or peaches instead of citrus fruits if you like.
I’ll be back on Thursday evening with 4-5 great homemade pasta recipes, before I am off to marvellous Melbourne for a week on Friday morning.

Ooooh I do prefer a thinner crepe to a heavier pancake cos you can have more of them and therefore change up the toppings! Enjoy Melbourne its been lovely so far this week!

What a wonderful topping idea! I’d not thought of using winter citrus on them in this way, but it’s perfect given the Shrove Tuesday timing. In Malta, we’ve an abundance of citrus I could cook up in similar style, and your topping makes a nice twist on the mere ‘squeeze of lemon juice’ I remember my parents putting on pancakes. I love thin pancakes, like you, but sadly, I am forced to make American-style puffy ones (they absorb the honey/maple syrup better, my son says!). Sweet tooth, I’m afraid! Off to make them a day late, but what the heck! Thanks for the reminder…
I love the bright blood oranges in these pancakes. They are in season right now and I am enjoying them so much. Made your blood orange and rosemary cake and the oranges made a pretty pink frosting. Thanks Katie.
