June 2013 ~ American Comfort Food

A lot of people think the USA is just the land of the hamburger and hot dog, but there are so many more classic dishes that deserve recognition. And with winter on the way, there’s no better time to indulge in diner-style comfort food. I’ve returned to New York City many times since getting hooked on my first trip in 1997. Each visit I come back loaded with inspiration, so here are some of my American all-stars. There’s only one way to serve a thick and creamy seafood chowder: piping hot and with crusty bread. For the same satisfying fix, try cayenne chicken drumsticks dipped in a creamy blue cheese sauce. Mac and cheese – my ultimate comfort food – is as American as the Statue of Liberty, so I’ve simply added panko breadcrumbs and bacon for extra bite, while chilli con carne is given a Mexican twist. If you’re a cheesecake fan, then you’ll love this baked version that’s laced with mocha and hazelnut.
