November 2012 ~ Weekend Lunch for the Girls

Recently, I decided to organise a get-together with some of my blog readers as a way to say thank you for all their support over the past two years. Emma, Jasmin, Lani, Maya and most wonderfully Livia ~ who flew all the way down to Sydney from Brisbane ~ joined me for a relaxed girls’ lunch. Also with us were my friends Karen, who helped me in the kitchen, Caroline, styling assistant on the day, and Madeleine, my fabulous right-hand girl who makes everything flow so effortlessly.

In the last 6 months I’ve been adding more pulses and grains to my recipes for their health benefits and fantastic texture, so a farro and lentil salad was definitely on the menu for the day. Flavour-packed chicken thigh fillets were made even better with a lime and herb marinade, which I prepared a day ahead, leaving me more time to sip strawberry mango margaritas with my guests at the table. Finally, a tangy lemon mousse with a sweet and sour cherry compote provided the perfect light, fruity finish for a ladies’ lunch.
