September 2013 ~ TV Dinners


I’ll be honest. While I cook most nights of the week for my husband and I, we don’t always sit around the table to eat. Often, like many of us, it’s a case of chilling out after a busy day in front of the telly. TV dinners are generally perceived as unhealthy, but they don’t have to be. These recipes are far from stodgy, but fitting for a night on the couch with a bowl in your lap or eating with your hands while watching a game
on the weekend with friends.

Wraps have become a TV-dinner staple in our house – you can make the filling in advance, then just assemble when you get home. Et voilà, dinner is served in no time. These smoky pork tortillas are made extra-special with a pineapple salsa that adds sweetness and spice to the saucy richness of the pork. Fried rice is a great way to use up leftover cooked rice. My take uses brown rice and lots of Asian greens for a healthy twist, and is topped off with sticky chilli chicken. Burgers are another shoe-in TV dinner, but instead of beef, why not make vegie patties? I’ve used low-GI legumes and black sesame seeds for texture and flavour, and swapped tomato ketchup for a zingy wasabi yoghurt. You won’t even miss the fries.

And who can go past pizza? Using store-bought flatbreads – think pita or naan – saves you time, as do a few shortcut ingredients such as barbecue chicken. Inspired by my recent trip to New York, quesadillas have become a new favourite in our house – they’re quick, easy and lend themselves to so many different fillings.

    HI Katie , just trying to find a way to say hi after meeting you on the flight across from Sydney to Adelaide recently. Been looking through your website….very impressive and now I know why I have heard of you !!! Big fan of the delicious magazine even though I am coeliac….have learnt to adapt many recipes over the years. I am also a mega fan of beautiful photos of food………love recipe books for this reason, will be purchasing yours soon. If you do receive this let me know .. I am in Sydney this week for a conference.
