Quinoa and lentil salad with asparagus, mint and haloumi

A new recipe up folks for inspiration during Meat Free WeekQuinoa and lentil salad with asparagus, mint and haloumi ~ Recipe here. It’s from my book and one of my faves, I find haloumi is a great meat substitute as it’s got great density and texture in a meal, especially a salad. Enjoy!

    I love anything with grilled haloumi but this looks delicious! The flavours look wonderful and can easily be made gluten free/ vegan/ vegetarian etc, so its a really versatile base. Yum! Thanks for sharing!

    I had to agree with your post commentary yesterday Katie about pasta dishes – easy for vegetarian diets to slip into eating pasta (fill with bulk in lieu of meat proteins). And with the issues of photographing pasta! Now, this salad here is something I’ll try as I love the mix of eastern Mediterranean flavours and have yet to actually try Quinoa! A first for me. Tnx for posting. Am so excited about browsing your book soon and dipping into more like this.
