Happy Pancake Day!
I just got this recipe is up in time for anyone reading in the northern hemisphere, but alas maybe not for anyone in Oz ~ who are all now probably rolling around their sitting rooms and kitchens reeling from ingesting way too much egg, flour and milk overload! ;)
This is a recipe from my book and features my favourite form of pancake ~ aka the thinner 'crêpe' variety. I used to love eating and making these as a kid with simple caster sugar and lemon juice, my mum was an amazing crêpe maker and flipper. This is my recipe for Buttermilk crêpes with citrus compote. Feel free to use plums or peaches instead of citrus fruits if you like.
