Marque Restaurant

I've been incredibly fortunate to meet Mark Best during my years as a photographer and blogger in Aus. 

We met initially at Qualia's Weekends of Wonderment event - you can see pics and the original story here. Mark was the guest chef for the weekend. He orchestrated the most amazing 5-course meal on the second night of our stay using all the local mud crabs we caught on the day's excursion. Mark and his team recreating some of his signature dishes from his prolific Sydney restaurant, Marque.

These are some of the food and interior shots I captured a few years in Marque whilst its doors were still open.

Sadly Marque is now closed. Mark is currently the Culinary advisor to the luxury Ritz-Carlton in Melbourne. His work commenced with a consultation to establish the brand pillars for the 80th Floor signature restaurant and establish the culinary and service concepts and training standards. His work also includes establishing local supply networks with Victorian producers, utilising his established connections and knowledge of the food media and mentoring the executive culinary team.
