Back in May of last year, I was asked by my good friend Tawnya Bahr of Straight to the Source if I would be interested in shooting a day event organised at Sydney's (beautiful and very trendy) Old Claire hotel in Chippendale.

The event was for Leeuwin Coast - a company from western Australia that practice innovative aquaculture. With 100 years of experience as ocean farmers, their dedication is to supply the world with the freshest, finest Western Australian seafood.

This event promoted Akoya - a beautiful natural treasure that grows native to WA and is traditionally known for producing spectacular saltwater pearls. They are oysters with a delicate and tender texture and a fresh ocean taste.

In combination with Western Australia's unique environment, Leeuwin Coast's bespoke aquaculture techniques have turned the Akoya into a delicacy in its own right.

Akoya is farmed using better techniques fueling a better ecosystem and planet. Traditionally famous for producing spectacular saltwater pearls, our bespoke aquaculture techniques, in combination with the uniquely pure WA environment, have turned the Akoya into a delicacy in its own right.

Recognised as the best in our state, Leeuwin Coast Akoya was announced as 2021 delicious. Harvey Norman Produce Awards State Winner.

And in 2022, their Akoya was recognised again, with the 'Outstanding Innovation' trophy in the delicious. Harvey Norman Produce Awards.

I had a great day shooting the chefs: Matt Stone and Ben Ing, in the kitchen and meeting all the guests, catching up with Tawyna and Lucy again, and savouring the taste of the food served on the day.
